Most of the September classes are already fully booked. So get your skates on and book your plaice soon (sorry!) if you want to book for an October class.</p>
<p>The Sydney Fish Market (SFM) is one of the most prestigious and largest of its kind in the Southern hemisphere and the variety of fish available here is rivalled only by Japan.  The Sydney Seafood School, which dates back to 1989, is reputed to be Australia&#8217;s top cooking school. <a title="Sydney Fish Market: About the Sydney Seafood School (opens in new window)" href="http://www.sydneyfishmarket.com.au/SeafoodSchool/AboutSSS/tabid/82/Default.aspx" target="_blank">The history of the school is quite fascinating</a>, much of the innovation being inspired by the need to educate customers about what to do with all the unusual varieties &#8211; many of which their earlier customers had never even heard of before.</p>
<p>By the way, it&#8217;s not just fish on offer at the SFM. There&#8217;s also a bottle shop, a fruit and veg market and a deli.</p>
<p>Classes on offer this October include: sushi, tapas, BBQ dishes as well as a variety of cuisines such as Spanish, Thai and Moroccan.  It&#8217;s an inspiring menu of classes, I&#8217;m sure you&#8217;ll agree.  The classes range in price from A$85 &#8211; A$155 and include a meal (which you&#8217;ve just learned how to cook) and complimentary wine tasting.  The classes are in three parts, starting with a demonstration, then a hands-on cooking session, then you can enjoy your meal.</p>

<p>Are travelers paying more to fly? Yes and no. While fares themselves are still far below the rates they reached in 2008 during the height of the oil crisis, fees are adding up fast. Several studies released in recent weeks indicate that the total price travelers now play to fly is 50 percent above the basic fare for the ticket. Bag fees and other so-called ancillary charges are driving the increase. And there are two more fee changes to report:</p>
<ul>
<li><a title="American Airlines" href="http://www.orbitz.com/App/PerformMDLPDealsContent?deal_id=american-airlines-flight-deals&amp;cnt=OVI" target="_self">American Airlines</a> now charges $19-$39 each way to select a &#8220;prime&#8221; seat in coach. At the moment, you can only buy the supposedly &#8220;prime&#8221; seats at the airport when you check-in at an American Airlines kiosk. The price is based on the distance of the flight: the $39 fee is for long flights such as transcontinental routes.</li>
<li> <a title="AirTran Airways" href="http://www.orbitz.com/App/PerformMDLPDealsContent?deal_id=airtran-airways-flight-deals&amp;cnt=OVI" target="_self">AirTran Airways</a> has added $5 to its fee to check your first bag. It is now $20 a bag.</li>
</ul>
<p>How much do the airlines rake in with extras like seat-assignment fees, &#8220;busy day&#8221; surcharges, fast-boarding fees and the like? About $2 billion a year, according to the most recent estimate.</p>
